Besan Laddu – Sweet Balls made of Chickpea Flour with Nuts – 24 Dec 11

Today, on Christmas Eve, we will of course have a wonderful dinner together with our family and guests. To this occasion I thought it would be a good idea to give you a recipe for a festive dish: special Christmas Laddus. Made from chickpea flour, they are also filled with nuts, almonds and pistachios – wintery, warming and just delicious!

Ingredients

500 g Chickpea Flour
400 g Sugar Powder
250 g Ghee
100 g Cashew Nuts
100 g Raisins
60 g Pistachios
60 g Almonds

How to make Laddus

The preparations are quickly done: cut or break the cashew nuts, the pistachios and the almonds into small pieces. Then you can start! Heat up the ghee in a wok. When it is hot, add the chickpea flour into it and mix it well. Keep on churning and thus fry the chickpea flour for about ten minutes until it starts to change its colour. It gets a bit darker, a nearly reddish brown. When it has reached this colour, switch the heat off. Now you also add the pieces of the nuts and the raisins and just mix them into the flour and stir for two minutes in the warm wok. Take out your mixture after that and let it cool down. For this you can spread it for example on a big plate.

Once it is cool, you mix the sugar powder into it. And then start making Laddus! If you are skillfull, try it with both hands at the same time. Take a handful of your mixture into each of your hands and start kneading and forming it into balls. When they are nicely round, place them onto a plate. Wait another 15 to 20 Minutes before your serve them – they will get a bit more hard so that it is easy to bite a piece off.

Tip for extra taste

We grind our sugar ourselves and can thus decide how fine we want to have it. The Laddus taste especially great when the sugar powder is not very fine. So maybe you buy sugar powder that is not fully fine or you take normal sugar and grind it yourself, leaving it a little bit grainy. This gives these sweet balls an extra special taste!
