Today I would like to give you a quick and easy recipe for a very popular and very basic dish of Indian cooking – Khichdi. It is made of rice and moong lentils and is not only very healthy but also tasty. It is a favourite of many children of our school and is also used as light food before Ayurvedic cleansing treatments. The most popular spelling is Khichdi but as the transliteration from Hindi to English is sometimes difficult, you can read many versions from Khichadi to Khichri.

Ingredients
1 bowl Split Moong Lentils with Skin
1 bowl Basmati Rice
4 bowl Water
1 ½ tbsp Ghee
1 tsp Cumin
½ tsp Turmeric
Salt according to Taste
How to make Khichdi?
Khichdi is one of the dishes for which an Indian family usually always has the ingredients at home – rice and lentils. You simply start preparing by mixing your rice and lentils and wash them properly with clean water.
After that you put a pot on the stove and heat up the ghee in it. When it is hot, add the cumin, stir once and add the turmeric powder. Stir for another half minute so that the spices can develop their aroma but don’t let them burn. Before that happens, add the rice, the lentils and the water in the pot and stir. Now you only need to add salt according to your taste and put a lid onto the pot to let it boil on medium heat.
You actually don’t need to do anything, just have a look after about five minutes. If you don’t see any water at the surface anymore, turn the heat very low and put the lid back on. Check again after another five to ten minutes. Your Khichdi is ready when the tips of the rice are pointing towards the ceiling.
You now have a quite dry version of Khichdi but many people like eating it in a more liquid form. For that, you only need to add some more water and it will be done whenever the lentils and rice are cooked soft.
You can eat this dish together with pickles, sprinkle coriander or lemon on top of it or just eat it instead of plain rice – you will see, it is nourishing, tasty and easy to digest!
